Sweet Taro Paste (Filling)

芋泥餡

 

This taro sweet paste is soft and packed full of taro flavour, perfect match for any style of dim sum and pastries. May it be filo crust, buttery crust, steamed wrappers - sweet taro paste works wonders as filling. It’s worth making at home since it’s delicious and contains no preservatives.

Ingredients:
500 g Taro
100 g Purple Sweet Potato
200 g Sugar
50 g Oil
40 g 2% Milk
40 g Roasted Pumpkin Seeds

Method:

  1. Peel, wash taro and purple sweet potatoes. Cut into small pieces. Steam roots for 25 minutes at high heat. In a food processor, add the steamed roots, sugar and milk - blend until paste form.

  2. In low heat, add oil into a pan, stir and cook paste until it no longer sticks to the surface. Transfer to a container and let cool until room temperature.

  3. Once paste is cooled off, add pumpkin seeds and mix well. Fridge paste for later use.

Note:

  • Pumpkin seeds are optional, it’s added mainly for texture.

  • Sugar amount can be adjusted to your liking.

 

 
 

芋泥餡

這款芋泥餡質地柔軟,充滿芋頭味,完美搭配任何風格的點心和糕點。值得在家裡做,因為它很好吃,而且不含防腐劑。

材料:
芋頭500克
紫蕃薯100克
砂糖200克
生油50克
鮮奶40克
烘焙南瓜子40克

做法:

  1. 芋頭去皮切細粒,紫蕃薯去皮切細粒,同放碟中隔水蒸25分鐘,取出放入機中,加糖,鮮奶,一同打成芋泥。

  2. 放入鑊中加油慢火炒,炒至芋泥不沾鑊,取出灘凍後。

  3. 加入南瓜子仁撈匀,放入雪櫃雪過夜,即成芋茸饀。

註:

  • 南瓜子是可選的,它主要是為了質地而添加的。

  • 糖量可以根據自己的喜好調整。
