Sweet Chili Sauce Thai Style Salad

Summer is around the corner, this year it’s been quite hot in Toronto. Perfect for a refreshing salad recipe! This sweet chili sauce Thai style seafood salad recipe will definitely get you going. Sweet and tangy with a subtle chili kick. Perfect dish to start off the season!

Ingredients:
1 pack (330g) mussels
2 cups julienne cucumber
½ cup julienne carrot
1 cup red onion shred
1 stalk of coriander chopped
2 stalks green onion diced

Mussels Marinade:
½ tsp salt
½ tsp white pepper 
1 tsp cooking wine
1 tsp cornstarch

Seasoning:
¼ tsp salt
¼ tsp light soy sauce
½ cup Chili Sauce for Chicken

Method:

  1. Thaw, wash, drip dry mussels. Add marinade ingredients and let marinade for 10 minutes.

  2. With high heat, boil mussels quickly for about 2 minutes. Retrieve and give mussels a quick ice bath. Drip and pat dry mussels thoroughly for later use.

  3. In a large bowl, with carrots and onion, add seasoning ingredients. Mix well. Add in cucumber, green onion, coriander and mix well. May serve immediately or refrigerate for ½ an hour to serve salad chilled. 

Note:

  • After adding seasoning, cucumber tends to release excess liquid. 

    • If serving salad immediately. Mix in cucumbers last to prevent salad from pooling.

    • If serving salad after refrigeration. Simply pour out excess liquid or leave excess liquid behind when plating.

鴛鴦醬蒸帶子豆腐

這個泰式海鮮沙律食譜絕對適合炎熱的夏天。甜而濃郁,帶有微妙的辣椒味。

材料:
青口肉1包330克
青瓜𢇁2杯
甘筍𢇁半杯
紫洋蔥絲1杯
芫茜1棵切碎
蔥2條切粒
鹽1/4茶匙

青口醃料:
鹽半茶匙
白胡椒粉半茶匙
酒1茶匙
生粉1茶匙

調味料:
¼半茶匙
生抽1茶匙
泰國雞醬半杯 Chili Sauce For Chicken

做法:

  1. 青口肉解凍冲洗淨滴乾水份,加入醃料撈勻醃10分鐘。

  2. 放入滾水拖水約2分鐘取出,放入冰凍水浸凍,用抹手紙印乾水份。

  3. 盆中,加洋蔥𢇁,甘筍𢇁,泰國雞醬及1/4茶匙鹽,1茶匙生抽撈勻,最後加青瓜𢇁,芫茜碎,青口,蔥粒,撈至均勻,放入雪櫃雪凍,即可上碟供食。

註:

  • 最後加青瓜𢇁,免撈得太多會出水。
