Shiitake Mushroom with Chicken
生財冬菇炆雞球
A simple and easy to make shiitake dish with chicken, a delicious addition to the Chinese New Year meal.
Ingredients:
5 oz (28 g) cooked shiitake
8 oz (226 g) chicken
2 ginger slices
2 shallots diced
Marinade:
½ tbsp light soy sauce
1 tbsp cooking wine
1 tsp cornstarch
Seasoning:
2 cup stock
1 ½ tbsp oyster sauce
1 tsp dark soy sauce
½ tsp sugar
A dash of sesame oil
A dash of white pepper
Thickener:
1 tsp cornstarch
A dash of water
Garnish:
1 Lettuce
Carrots slices
Method:
Wash and cut chicken into pieces. Mix well with marinate ingredients and let marinade for 10 minutes.
High heat with 2 tbsp oil. Once the pan is heated, cook ginger slices and shallots to bring out their flavour. Add in chicken pieces and let cook thoroughly. Stir in shiitake and add in seasoning, mix well. With the lid, cook for 20 minutes on low heat.
When ready, slowly add in thickener (cornstarch and water) at intervals, stir well.
Accompany braised chicken and shiitake on a bed of cooked lettuce. Or other vegetables that can soak up sauces, like pea shoots.
Notes:
Carrots are optional for colour contrast, presentation aesthetics.

一道簡單易做的雞肉冬菇菜,是過年大餐的一道美味佳餚。
材料:
冬菰5安士 (28 g)預早蒸熟
鷄肉8安士 (226 g)
薑2片切粒
乾蔥2粒切片
醃料:
生抽半湯匙
酒1湯匙
生粉1茶匙
調味料:
上湯2杯
蠔油1 1/2湯匙
老抽1茶匙
糖半茶匙
麻油少許
白胡椒粉少許
打茨:
生粉1茶匙
水少許
配菜:
生菜1棵
甘筍花數片
做法:
雞上肶肉洗淨抹乾水份,在冇皮1面近骨䖏剪開,放入膠袋,加入雞醃料撈至匀,醃5小時或過夜。
取出鷄件放在可入焗盆中,皮向上放入預燒焗爐,先加水半抔在焗盆內免焗燶,用375度F焗35分鐘,焗至面金黃色及鷄肉熟即成。
註:
鷄肉洗淨切件,加醃料撈勻醃10分鐘。
燒熱2湯匙油,放薑粒,乾蔥爆香加雞件炒透,加冬菇炒勻賛酒,倒入調味料煮滾,轉慢火煮20分鐘。
放入甘筍花用少許,生粉水埋茨上碟。
生菜𤆥熟伴碟邊。
