Chicken Eggplant Boat
雞粒紫茄船
A tasty dish made with globe eggplants, a fun way to get more vegetables in your diet. A perfect match with rice or just have it on it’s own for a low carbohydrate option. Globe eggplants (American eggplant) is used for this dish, since it’s wider in size, letting it sit on a serving plate. Be sure to lightly steam the eggplant boat, overcooking will cause eggplant to loose it’s form. When serving, simply cut up the eggplant with a knife and fork.
Ingredients:
1 globe eggplant about 1.5 lbs (American eggplant)
6 oz chicken thigh meat (can sub with breast meat)
3 tbs of diced carrots
2 tbs of minced ginger
½ tbs of minced garlic
1 tsp of chili bean paste
2 stalks of green onion
Marinade:
⅙ tsp salt
A dash of ground white pepper
½ tbs cornstarch
Flavour Ingredients:
1 cup of water
½ tbs oyster sauce
½ tsp dark soy sauce
¾ tsp sugar
½ tsp chicken bullion
A dash of sesame oil
Method:
Cut up chicken thigh meat into small pieces and marinate for 10 minutes.
Forming the eggplant bowl. Cut at the side of the egg plant, about ⅓ deep. Scoop out ⅔ of the eggplant. Steam the eggplant for 4 minutes. You may choose to garnish with shredded lettuce or any type of garnish of your choice.
Cut scooped out eggplant into ½ inch cubes.
Heat up 2 tbs of oil and add ginger. Give it a minute or two before adding chicken, garlic and chili bean sauce and stir-fry well. Add in cooking wine and eggplant. Add in seasoning, using medium high heat, let cook for 6 minutes. To finish, add in diced carrots and spring onion, mix well and it’s ready to serve.
材料:
外國紫茄瓜1隻,约1.5磅
鷄腿肉6安士
紅籮蔔粒3湯匙
薑 2湯匙
蒜茸半湯匙
豆板醬1茶匙
蔥2條切粒
醃料:
鹽 ⅙ 茶匙
胡椒粉少許
生粉半湯匙
調味:
水1杯
蠔油半湯匙
老抽半茶匙
糖¾茶匙
雞粉半茶匙
麻油胡椒粉各少許
做法:
雞枇肉切粗粒 加醃料撈勻醃10分鐘。
紫茄瓜直切去1/3邊,將2/3邊茄肉刮出造成船形狀。茄船放碟上蒸4分鐘。用生菜絲圍在船邊。
茄瓜肉刮出切半吋丁粒。
燒熱兩湯羹油爆香薑粒,放雞肉蒜蓉和豆瓣醬炒透,讚酒加茄肉炒勻。倒入調味料用中火煮6分鐘。加紅蘿蔔粒、蔥粒兜勻。取出放入茄子船內即成。
