Spare Ribs Vegetable Stew
雜菜炆排骨
A delicious short ribs stew with sweet vegetables. Short ribs are tender and infused with the flavour of tomato. Perfect dish to have with rice or noodles.
Ingredients:
1 lbs pork ribs
½ lb sweet potato
1 large onion
½ lb tomato
1 carrot
1 ½ tsp minced garlic
Marinade:
⅓ tsp salt
2 tsp soy sauce
2 tsp cornstarch
Seasoning:
1 cup chicken broth
1 cup water
¼ tsp salt
1 tsp sugar
Material: (thickener)
2 tbs water
½ tsp cornstarch
a dash of sesame oil
Method:
Peel, wash sweet potato and carrots. Cut into triangle shapes, by rolling and cutting (thick slices).
Wash, dry and cut pork ribs. Marinate ribs with marinade ingredients for at least 20 minutes.
Heat 2 tbs of oil and fry pan-fry sweet potato until golden. Add carrots, sliced onions and tomato - stir-fry and set aside.
In medium high heat with a bit of oil add ribs, garlic and pour seasoning ingredients to cook. Add in the vegetables and let boil. Simmer in low heat for about 20 minutes until pork ribs are cooked.
Note:
You may substitute sweet potato with potatoes.
Yellow flesh sweet potato is chosen for this recipe. Commonly found orange flesh yams will break down very easily when stewed.

醃料:

生抽2茶匙
生粉2茶匙
汁料:
清鷄湯1杯
水1杯
鹽1/4茶匙
糖1茶匙
茨料:
水2湯匙
生粉1/2茶匙
麻油少許
做法:
蕃薯,紅蘿蔔,去皮洗淨,滾刀切角形。
排骨洗净切件加入醃料撈勻,醃20分鐘。
燒熱2湯匙油,放入蕃薯煎至微黃色,然後加紅蘿蔔,洋蔥,蕃茄,炒透取出。
加油少許放入排骨,蒜茸炒透,倒入調味料,加入各樣什菜煮滾,轉中慢火煮至排骨熟,約20分鐘,埋茨即可上𥐙供食。
