Fermented Tofu Braised Chicken

花雕腐乳炆滑雞

A delicious infused chicken with fermented tofu. A sauce with the delicate taste of fermented bean curd and subtly sweet Huadiao wine, this dish goes amazingly well with rice.

Ingredients:
700g Large Chicken Thigh
4 pieces of Fermented Tofu
3 tbsp Water
⅓ cup Huadiao Wine
1 tbsp Ginger
1 Shallot
2 Stalks Green Onion
A few slices of carrot

Marinade:
⅓ tsp Salt
1 tsp Oil
1 tsp Sugar
½ tsp Chicken Powder
1 tsp Cornstarch
A Dash White Pepper

Method:

  1. Rinse and cut chicken into pieces. Marinate chicken with marinade ingredients for 20 minutes.

  2. Heat 2 tbsp of oil in high heat and saute shallot and ginger to bring out their flavour. Add chicken pieces and saute until golden. Add Huadiao wine along with fermented bean curd sauce and mix well.

  3. At medium low heat, cook with lid on for 8 minutes until chicken is fully cooked. Mix in carrots and green onion   and it’s ready to serve.

Notes:

  • There are 2 common types of fermented tofu also known as fermented bean curd. 1 type is with spice and the other one without. Pick one that suits your taste.

花雕腐乳炆滑雞

腐乳和雞肉的美味組合。 這道菜帶有腐乳的細膩味道和微甜的花雕酒,與米飯搭配得非常好味。

材料:
大雞肶兩只约700克
腐乳4件加水3湯匙攪溶
花雕酒1/3杯
薑米1湯匙
乾蔥1粒切片
蔥2條切段
甘筍花數片

醃料:
鹽1/3茶匙
生抽1茶匙
糖1茶匙
鷄粉半茶匙
生粉1茶匙
白胡椒粉少許

做法:

  1. 鷄肶洗淨斬件,加入醃料撈勻醃20分鐘。

  2. 用2湯匙油爆香,乾葱,薑米加入鷄件爆香,倒入花雕酒及腐乳汁炒勻加蓋。

  3. 轉中慢火煮約8分鐘煮至鷄件熟,加筍花,蔥段兜勻即可上菜。

  • 選擇適合您口味的腐乳,辣或不辣.
